Discover delectable dishes that can trace their culinary heritage back to the days of the Indian Maharajahs, Maharanis and their lavish palaces. Taking inspiration from the Northern Frontier region, each dish on the Down to Earth menu uses a simple preparation style, with the meat, seafood and vegetables lightly marinated and cooked in a tandoor so they remain mouth-wateringly tender and succulent. Spices are used sparingly, so as not to overpower the natural flavours of the fresh ingredients, while hints of the Middle Eastern influences from beyond India’s northern border add another dimension to each dish.

 

Menu Highlights

The six-course menu is a feast fit for ancient rulers: platters heavily laden with succulent chicken shish, duck koobideh and lamb kebabs; fragrant vegetable biryani; flavoursome roast and smoked vegetables; and an indulgent traditional Indian dessert.
