A Maldivian Twist to the Christmas Cake
A ladle of love, a pinch of patience and a spoonful of spirit, these are some of the secret ingredients that make up any dish worth eating. Soneva’s Christmas Cake is no different, the annual ‘Soneva Cake Mix’ lets us add to these special ingredients in abundance.
Love, the most special ingredient of all, comes from our extended Soneva family – chefs, guests and Hosts – lending their hearts and hands to mix the ingredients and flavours of the 2019 Christmas Cake. This year the mix is a little more special, we are focusing on ingredients native to countries in and around the Indian Ocean and those grown at Soneva Jani.
Dried fruit, nuts and spices from Sri Lanka, East Africa, Southeast Asia, the Middle East and India make up the rich base of the cake mix. From the islands of the Indian Ocean we have chosen the fragrant vanilla, cinnamon, cardamom, star anise and nutmeg. Dried coconut from Soneva Jani adds a local touch, all harvested, processed and dried right on the island.
Christmas also calls for festive spirits. We chose a combination of Arrack, a Sri Lankan palm spirit, Cointreau and Cognac. The next ingredient, the spirit of generosity, comes from the combined effort of all involved, and a measure of Brandy for good luck. These aromatic ingredients, all bursting with flavour, were mixed beneath the swaying palms of South Beach.
And now, we wait…
After mixing the exotically tropical ingredients with the more traditional spices, fruits and nuts, we carefully store the mix for a nine-month hibernation. This allows the flavours and ingredients to weave their magic.
The reward of patience is to be revealed on December 25. The proof will be in the pudding, quite literally.
