Kiko Moya is the chef of L’Escaletta, located in Alicante, Spain, and has been awarded two Michelin stars. His father was the co-founder and previous chef in the same restaurant. He first joined his family in the kitchens at the age of 14, before brief stints at El Bulli and El Celler de Can Roca. The menu offers gourmet travellers dishes full of delicacy, skill and, above all, traditional flavours. Here we find the aromas and textures of game, of handmade sausages, of mushrooms, and fish such as sea bass, cod or tuna.
