In 1996, Giancarlo earned his first Michelin star and in 1998 he was named Emerging Chef by the Espresso Guide. He received a second star in 2002 and three forks from the Gambero Rosso Guide in 2005. He has been President of the Italian Commission of the prestigious competition for chefs, the “Bocuse d’Or”, since 2010.
In 2014, he opened Casa Perbellini, which a year later received Three Hats, a score of 18/20 and the New Proposal of the Year award by the Espresso Guide. In 2016 it was awarded two stars, and in 2017 it received Four Hats in the Espresso Guide.
Since 2015, Giancarlo has been part of the Progetto Mondo MLAL and FOCSIV NGOs, supporting fundraising campaigns for nutritional education in third world countries and initiatives in Italian schools.
